Shrimp Scampi

Ingredients:

6 Tablespoons unsalted butter at room temperature

¼ cup olive oil

1 Tablespoon minced garlic

1 Tablespoon minced shallots

2 Tablespoons snipped fresh chives

salt and freshly ground pepper to taste

¼ teaspoon paprika

2 lbs. Large shrimp peeled and de-veined

 

Directions:

1. Preheat the broiler

2. Combine all of the above except shrimp in a large bowl; blend

3. Toss shrimp in mixture until thoroughly coated.

4. Broil the shrimp as close as possible to the flame for 2 minutes on each side.  Serve immediately. 

We actually sauté the shrimp in a pan on the stove.
