This is my new all time favorite dip. Keep in mind, I am not a bean person and I
LOVE this dip. I actually made it once
just to eat all by myself. Now that’s
embarrassing – but it tells you something (about the dip and me, huh?).
Ingredients:
3 Tablespoons red wine vinegar
2 teaspoons hot sauce
1 Tablespoon minced garlic
1.5 Tablespoons olive oil
1 avocado, cubed
1 (15 ounce) can white corn kernels, drained
1 (15 ounce) can black beans, drained
1/2 lb Roma tomatoes, diced
1 cup diced green onion
1/2 to 3/4 cup chopped cilantro
salt and pepper
Directions:
1. Whisk together the vinegar, oil, garlic and hot sauce.
2. Then fold in the avocado and the rest of the ingredients.
3. Season to taste with salt and pepper and serve with Tortilla chips (I prefer
Frito scoops) as an appetizer. Or you can serve as a salad in
lettuce-lined bowls.
