This is one of the yummiest dips I’ve ever had and I am not a bean person
at all!
Ingredients:
1 16oz. can refried beans
8oz. sour cream
½ packet of chili seasoning or taco seasoning mix
¼ cup chopped onion
1lb. Grated cheddar cheese
Directions:
Set aside one cup grated cheese and mix all other ingredients together.
Put in a baking dish and add the remaining one cup cheese on top. Bake in
a preheated oven at 350 degrees for 30 minutes. Serve with corn chips.

Cat
Poo on Rye

This is a great party appetizer. Debbie
forgot the name of it but her kids told her it looked like cat poo, so
that is how it got this unique name. Despite that – it’s yummy!
Ingredients:
1 lb. Ground
beef
1 lb. Ground sausage
1 lb. Velvetta cheese
Hot Sauce (to desired taste)
1 loaf party rye (the small bite size loaf of bread usually found in the
deli / cheese department of your local grocery store).
Directions:
Brown ground beef and sausage then drain grease.
Combine the meats with the velvetta, and hot sauce in the same pan until
cheese melts over medium heat.
Spread the mixture on party rye and cook in preheated 350 degree oven
until brown (about 10-15 minutes).

Easy Guacamole

Even my husband likes this one and it’s so
simple!
Ingredients:
2 Avacados
1 small onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced (or 1 lemon juiced)
salt and pepper to taste
Directions:
Peel and mash avocadoes in a medium serving bowl. Stir in onion, garlic,
tomato, lime (or lemon) juice, salt and pepper. Chill for half an hour to
blend flavors.

Humus

Ingredients:
1/3 cup Sesame Tahini Paste (usually found in the health food section of
any grocery store)
1 can garbanzo beans
2 ½ Tablespoons lemon juice
2 – 4 cloves of garlic (depending on your taste)
1 teaspoon salt
3 – 5 Tablespoons water (start with 3, check consistency and add as needed
up to 5).
Directions:
Mix all ingredients in blender or food processor. Serve with pita bread,
bagel chips or corn chips.

Martha Stewart Sausage Balls

These are the best sausage balls you will
ever have. They are a pain to make, but well worth the trouble. Everyone
will love them (of course, they come from Martha herself)!
Ingredients:
2 lbs. Jimmy Dean Sausage
1 ½ cups all purpose bisquick
4 cups shredded sharp cheddar cheese
¼ cup finely chopped green onion
¼ cup finely chopped scallion
½ cup finely chopped celery
½ teaspoon garlic powder
Directions:
Combine all
ingredients and shape into 1 inch balls. Bake in preheated 350 degree
oven for about 15 minutes. Make sure your cookie sheet is not a flat
cookie sheet because these are extremely greasy. The balls will be
swimming in grease and you do not want the grease to overflow in your oven
causing a fire (and yes, I am speaking from experience here).

Salt Potatoes

These are very unique and they
always disappear at parties. They end up looking like munchkin donut
holes, so make sure you tell your guests they are potatoes before they
take one expecting something sweet.
Ingredients:
1 bad new red potatoes (as small in size as possible)
1 canister of salt (yes, the large canister of table salt like Mortons)
Dip Ingredients:
16oz. Sour Cream
Knorr Leak Soup Mix
Bacon Bits to taste
Directions:
Wash the potatoes.
Pour the entire canister of salt in a large pot of boiling water.
Boil the potatoes in the boiling salt water until cooked (about 20
minutes)
Remove potatoes from water and place on a dry surface. Do not let the
potatoes touch each other while cooling.
Once cooled to room temperature, serve with dip.
Dip Directions:
Mix sour cream, soup mix and bacon bits in bowl. Let stand refrigerated
at least 30 minutes before serving.

Sliders

These are the homemade version of
Krystal Burgers – Yummy. Great for late night party snacks.
Ingredients:
2 lbs. Ground beef (not lean beef)
2 eggs
2-3 packages dry onion soup mix
salt & pepper to taste
2 packages Pepperidge Farm Party Rolls (@ 20 rolls each)
sliced dill pickles
American cheese (optional)
Directions:
Mix beef, eggs, onion mix, salt & pepper through (adding onion mix until
beef is not wet). Press into cookie sheet and bake at 350 degrees (make
sure to press meat very thin – it doubles thickness after cooking). Bake
until meat is brown but edges are not crispy.
Slice rolls in half
lengthwise. After meat has cooled, cut a chunk of beef to fit in between
sliced rolls. If using cheese, place on top of meat along with pickles.
Cut rolls to make individual burgers.
Place on platter and
cover with plastic wrap. Before serving, microwave covered until burgers
are steamed and warmed.

Texas Caviar

This is my new all time favorite dip. Keep in mind, I am not a bean
person and I LOVE this dip. I actually made it once just to eat all by
myself. Now that’s embarrassing – but it tells you something (about the
dip and me, huh?).
Ingredients:
3
Tablespoons red wine vinegar
2 teaspoons hot sauce
1 Tablespoon minced garlic
1.5 Tablespoons olive oil
1 avocado, cubed
1 (15 ounce) can white corn kernels, drained
1 (15 ounce) can black beans, drained
1/2 lb Roma tomatoes, diced
1 cup diced green onion
1/2 to 3/4 cup chopped cilantro
salt and pepper
Directions:
1. Whisk together the vinegar, oil, garlic and hot sauce.
2. Then fold in the avocado and the rest of the ingredients.
3. Season to taste with salt and pepper and serve with Tortilla chips (I
prefer Frito scoops) as an appetizer. Or you can serve as a salad in
lettuce-lined bowls.
