Breakfast Rolls
Source: Heather Thomas

Before we all had kids of our own, my sister (Heather) would serve these every Christmas morning for breakfast.  Every time I have them I think of her.  A great comfort food for me.  Yummy and good memories.

Ingredients:
2-3 packages dinner rolls (the kind that come in the aluminum pan already)
Swiss Cheese (2-3 packs depending on how many rolls you get)
Sliced Ham (again depends on how many rolls and the thickness of the ham).  During the holidays left over Honey Baked ham is the best.
Spread Mixture Ingredients:
2 sticks margarine softened
2 Tablespoons poppy seeds
2 small onions (or one large onion) chopped
5 heaping teaspoons prepared mustard

Directions:
Blend the spread mixture ingredients in blender until smooth and refrigerate 24 hours.
Split rolls in half lengthwise
Spread each half with butter mixture (make sure to save some spread for the top of the rolls).
Place sliced ham on bottom half of rolls and top the ham with swiss cheese.
Return top half of rolls and spread the outside top portion with butter mixture.
Return rolls to aluminum pan and seal with foil.
Bake in preheated 350 degree oven until cheese melts (about 5-7 minutes)
Remove from oven and cut rolls into individual sandwiches.

Irish Bread

(my grandmother, so don’t make fun)
This is true Irish Bread and the best I’ve ever had.  My grandmother came from Ireland and she was a terrific baker!

Ingredients:
3 cups flour
1 cup bran buds (if you can’t find bran buds 1 additional cup of flour can be substituted)
1 cup sugar
3 teaspoons baking powder
¼ teaspoon salt
1 stick melted butter (or margarine)
16 oz. sour cream
2 beaten eggs
1 cup raisins

Directions:
Mix the dry ingredients together.
Add butter, sour cream and eggs (spoon or beater is fine)
Add raisins (it’s really hard to get the mixture even at this point)
Pour in a greased / lightly floured angel food or bundt pan and bake in a preheated 350 degree oven for 45 minutes.
Let cool and serve

Pumpkin Bread

(my grandmother, so don’t make fun)
Anything my grandmother baked is worth eating – trust me.  This is great for the holidays.

Ingredients:
3 cups sugar
1 cup salad oil (I use regular vegetable oil.  I have no idea what salad oil is, but it’s how the recipe was written).
3 eggs
3 cups flour
½ teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups pumpkin
½ teaspoon salt
1 teaspoon nutmeg
1 teaspoon ground cloves

Directions:
Beat oil and sugar until well blended.  Beat in eggs one at a time.
Add pumpkin and blend.
Add sifted dry ingredients and blend.
Pour in a greased / lightly floured tube or bundt pan.
Bake in a preheated 325 degree oven for 1 ½ hours.
Let sit 10 minutes before removing from pan.
