Mon's
Brunswick Stew
Taco Soup
Mon’s Brunswick Stew
Source: Irene Palmer
(better known as
Mon)
Mon is quite possibly the best cook I have ever known. Excellent southern
cooking! This is the easiest Brunswick Stew I have ever made because you
just open cans and dump them in your crock-pot!
Ingredients:
1 ½ lb. can Castlebury Beef Stew
1 8 oz. can Castlebury BBQ Pork
1 8 oz. can Castlebury BBQ Beef
1 8 oz. can chicken breast (drained)
1 can chopped tomatoes
1 can cream corn
1 can regular corn (drained)
1 small onion chopped
1 Tblsp. lemon juice
1 Tblsp worchestire sauce
1 Tblsp vinegar
1 Tblsp garlic powder
1 tsp. garlic salt
Directions:
Mix all together in crock pot and cook until hot (I cook low all day).
Some of the size
cans listed above may be hard to find. If so, use the next size up
(example – I use a 10oz. Can of chicken breast because I can never find
8oz.)

Taco Soup
Source: Heather Thomas
This is a great meal
to bring to a family instead of casseroles. My sister was right when she
said, kids hate casseroles! This is really good and it can be served as
soup or an appetizer.
Ingredients:
1 ½ lbs. Browned ground beef
1 onion chopped and browned
2 cans white corn (undrained)
1 can Rotel
1 can diced tomatoes
1 envelope ranch dressing mix
1 envelope taco seasoning
Directions:
Brown the ground beef and onion, then drain grease.
Add all remaining ingredients and simmer about 20-30 minutes. Serve over
any type corn chip. Top with cheddar and sour cream if you like for an
added bonus!
